I love to eat raw whenever I can. I don’t know a ton of great raw recipes, but my friend, Amy made a corn, avocado and tomato salad at a party once and I really liked the concept.
I decided to add a few ingredients and found myself with a really zesty, delicious and super nutritious salad that gets rave reviews every time I make it. It only takes about 5 minutes to make and the recipe I’m giving you will serve about 6 good size portions.
You could (and probably should) also add cilantro to this, but as you know, I totally despise it so I won’t include it!
Corn, Avocado and Tomato Salad

Ingredients
- 5 Ripe Avocados diced
- 4 Large Tomatoes diced
- 2 cans Sweet Corn drained
- 1 Lime
- 1 clove Garlic minced
Instructions
- Mix together the avocados, tomatoes and drained corn in a large bowl.
- Squeeze the juice of one lime into the vegetable mixture.
- Add the minced garlic, stir and serve!
