Whenever I’m having any dinner party or BBQ, I’m always worried about making a memorable appetizer. Not only does the appetizer set the tone for the entire meal, but it’s the first bite of food people are taking and you want them to be excited about the remainder of the meal!
One of my go-to’s is a super simple basil burrata dip with fresh tomatoes. Even though it’s comprised primarily of cheese, it tastes really light and is great for a summertime starter. The best part? You only need 3 ingredients to make this (plus a little sea salt). I always like to create simple recipes when I’m entertaining so that I’m not in the kitchen all night (because let’s face it, I want to be hanging out with my friends!)
Oh and if you don’t already know what burrata is, it’s resembles a ball of fresh mozzarella, but when cut it open there is a super rich filling of fresh mozzarella soaked in heavy cream. It’s kind of epic.
Basil Burrata Dip w/ Fresh Tomatoes
Ingredients
- 1 ball Fresh Burrata I get mine at Whole Foods and am a fan of the BelGioioso kind
- 2 Large Tomatoes
- 3 Leaves of Basil fresh
- Sea Salt to taste
Instructions
- Dice up your tomatoes into medium pieces and chiffonade your basil (that’s just a fancy word for, stacking your basil leaves and then rolling the basil up together and thinly slice it to make ribbons).
- Combine your tomatoes and your burrata ball and start mixing it all up until the cheese breaks down and becomes like a dip.
- Carefully fold in your fresh basil and serve with your favorite cracker! My go to is always these Raincoast Crisp crackers.
