Let’s be honest here for a minute. There is no better club in all of Chicago than The Underground. I’m not much of a nightlife person, but if I ever do decide to go out, I don’t even think twice about where I’m going to go. This River North Club has the best crowd (you will always spot a celebrity or two), the most incredible ambience and of course, the best drinks.
Last week I got a chance to sample Head Mixologist extraordinaire, Jon Ruiz’s, new Summer Cocktail list for Underground. To say these cocktails were well thought out, perfectly balanced and delicious are an understatement. I was completely blown away by the thought and creativity that he put into these drinks.
Of the six I tried, here are the top three you need to order next time you’re there:
The Kiwi Mule: This drink is perfect for those who like a traditional Moscow Mule with an added hint of tart and sweetness. In all honesty, I’m not a huge kiwi fan, but the way Ruiz balanced the muddled fruit with the Effen blackberry and ginger beer made it my absolute favorite of the night.
Cassis Martini: This sweet and savory martini is made with Bombay Sapphire, orange juice, Crème de Cassis, agave and basil leaves. I think I liked this one so much because I would never have thought to combine those ingredients on my own. Only a true mixologist could have come up with this one.
Spiced Carrot Cake: I mean, who doesn’t want a delicious carrot cake cocktail? This zesty carrot based drink is perfect if you like unique, full body cocktails that finish really smooth. It’s made with Grey Goose Melon, Ancho Chile Liqueur, a variety of juices (carrot, apple, orange and pineapple) and sweetened with agave nectar.
I’ve always believed that if you’re going to eat or drink anything in life, it should be something totally amazing. Why waste the calories on something subpar? That’s why, this summer you need Underground’s new cocktails! You won’t find better drinks in Chicago.
