Let’s just put it this way, if you know, then you know! On top of being the greatest grocery store of all-time, it happens to be right across the street from me which is VERY convienent. They have an incredible website, facebook page and even an in-store recipe display where I found the most delicious looking Crunchy Autumn Chicken Salad recipe. I decided to re-create it, but of course I had to put my own spin on it by Air Frying the chicken and zucchini.
The finished salad was incredible! The recipe couldn’t have been easier and I was able to find everything SO quickly and easily at Publix. Between trying to get unpacked from the move and the busy schedule of all the holidays upcoming, this was is a total life saver and will be on repeat for the foreseeable future.

Now for the recipe!
It all starts with some air fried chicken that I dredged in Hellmann’s® Real Mayonnaise and a combination of Knorr® French Onion recipe mix and breadcrumbs.
After that, I air fried up some zucchini!
Then, you just place them the chicken and the zucchini with the rest of the salad ingredients. For this recipe, I usedgrape tomatoes, apples, walnuts and dried cranberries.

Crispy Autumn Chicken Salad
Ingredients
- 1 package Knorr® French Onion recipe mix
- 1/2 cup Plain dry bread crumbs
- 4 Boneless skinless chicken breast halves
- 1/3 cup Hellmann's® Real Mayonnaise
- 2 Zucchini sliced
- 8 cups Mixed greens
- 1 cup Grape tomatoes halved
- 1 Granny Smith apple cored and thinly sliced
- 1/2 cup walnuts
- 1/2 cup dried cranberries
Instructions
- If baking, preheat oven to 425°.
- Combine Knorr® French Onion recipe mix with bread crumbs in shallow bowl and set aside. Coat chicken with Mayonnaise, then with bread crumb mixture.
- If baking, arrange chicken on baking sheet, then arrange zucchini around chicken. Bake, turning zucchini once, until chicken is thoroughly cooked, about 20 minutes. Cool chicken slightly, then slice if you'd like.
If using air fryer, cook coated chicken at 390 for 12-15 minutes. Cook the zucchini at 350 for 10 min - Arrange salad greens on serving platter. Top with chicken and zucchini, then remaining ingredients. Drizzle with your favorite dressing.
