For months, I’ve been dying to make pulled pork taquitos in the air fryer. Not only are they a delicious appetizer to make for guests during the holidays or game days, but you can actually make them pretty easily too.
I know what you’re thinking. Pulled pork takes HOURS to cook in a slow cooker that you may or may not have. Well, here’s a life hack for you…
Say hello to Curly’s Smoked Pulled Pork and be prepared to love me forever for telling you about them! This pork is smoked for hours by experts with over 50 years experience. It’s cooked over a wood fire and after it’s slowly smoked, it is pulled (never shredded). The result? The most delicious, gluten-free pork, with none of the wait. You literally just open the package and can use it in this recipe.
They also have a new larger tray available with premium quality and a meatier texture at Walmart. Click here for a store locator to find out which Walmart’s in your area are carrying these new Curly’s products.
Now for the recipe!
It couldn’t be easier! It all starts with 5 simple ingredients. Flour or corn tortillas ( I think the corn tastes a bit more authentic, but sometimes they can be tricky to work with), Curly’s BBQ Pulled Pork, shredded cheddar, scallions and your favorite ranch!
To make it, you simply add some sliced scallions to a pan and cook for a minute or two. Then add in some pulled work. Mix around till just heated through. The pork is already cooked, you’re really just mixing the scallions in for added crunch.
Then, assemble your Taquitos. If you’re using a flour tortilla, you can literally just add a tablespoon of shredded cheese and two tablespoons of the pulled pork mixture, roll up and secure with toothpick. If using a corn tortilla, you must soften it first! You can heat it over a pan or put it in the microwave on a wet paper towel for 10 seconds.
Spray with oil of your choice and air fry at 400 degrees for 6 minutes!
Top with your favorite ranch and enjoy!
