Slimmed Down Recipe ALERT!
There is nothing I love more than a delicious, crunchy chicken parmesan loaded with tangy sauce and melty cheese. Truthfully, I absolutely LOVE all Italian food but the heaviness sometimes keeps me from enjoying it. This skinny chicken parmesan recipe makes it totally guiltless! This baked version is every bit as delicious, but SO much better for you.
Instead of frying the chicken, I like to bake a thin chicken cutlet or pop it in the air fryer. These are my favorite bread crumbs that are easy to find at your local grocery store or Target. Use my oven roasted tomato sauce recipe for the perfect topper!
As for the pasta (because what goes better with chicken parmesan than pasta?!), I’m using my two ingredient homemade orecchiette pasta. There are no special tools needed to make this dough OR form it! As long as you have two hands, you got it.
Skinny Chicken Parmesan and Fresh Pasta
Ingredients
Pasta Dough
- 1 cup Semolina Flour
- Olive Oil drizzle
- 1/2 cup Water warm
Chicken Parmesan
- Chicken Breast thin or chicken cutlet
- Flour
- Bread Crumbs seasoned; I season mine with salt, pepper, garlic powered and onion powder
- Olive Oil Spray
- Homemade Tomato Sauce
- Mozzarella shredded
Instructions
Pasta Dough
- In a bowl or on a counter top, add semolina flour. Make a hole (or well) in the center and add a drizzle of olive oil. Slowly add in warm water a little at a time and incorporate it in. Once it comes together, kneed for 10 minutes until smooth. Wrap in plastic and put in fridge for up to 24 hours. Give it at least 30 minutes before you move on to step 3. This pasta is about 5 points per serving (makes 6 servings)
- Cut up the dough and roll it into even logs. Then, slice them up into little bits, about a quarter inch, and make them into little hats. Make sure to slice them up evenly.
- Once they're all sliced up, you're going to put the side of the knife onto the dough and pull it towards you, as if you were scooping. Once it comes over your knife, use your thumb to flip it back and form it until you get a "little hat". You can also watch my “fresh pasta” IG story highlight to see how to make the pasta into the shape!
- When ready to cook pasta, just boil water and cook until they float! Fresh pasta usually cooks in about 3 minutes.
Chicken Parmesan
- Pound your chicken! The key to good chicken parmesan is getting a thin chicken. You can buy a chicken cutlet or you could just pound out a chicken breast super thin. I put the chicken in a zip lock bag use the back of a pot to flatten it!
- Coat your chicken in flour, then egg and then seasoned bread crumbs. Spray with olive oil spray and place on a foil lined baking sheet. Bake at 375 degrees for 20 minutes or airfry at 400 for 15 minutes.
- Top it off! I use my homemade tomato sauce (found in the “tomato sauce” IG story highlight). If you wanna keep it super skinny, use reduced fat shredded mozzarella.
How good does this sound? I’d love to hear what other types of Italian foods you’d like my to slim down. Let me know in the comments below!
Love always,
