I’ve heard so much about diet cola brownies, but with all the chemicals that coke can contain, I knew there had to be a healthier way to get the same great flavor. That’s where LaCroix comes in! LaCroix provides the same carbonation needed for that fluffy, light texture, but cuts out all the not so good for you ingredients.
I love hacking recipes to make them lighter, and this recipe removes the oil and egg from brownies making them a much healthier choice! Not to mention, Diet Coke contains 39 grams of sugar in a 12 ounce serving and LaCroix serves up no sugar at all.
I also love adding a little pizzaz to my brownies, so I drizzled them in a peanut butter glaze. Instead of using heavy peanut butter with all the extra fat/calories, I used PB2 and LaCroix to achieve a light, guilt-free peanut butter glaze.
Oh, and by using LaCroix instead of the oil/eggs required on the box mix, you reduce the calories in the entire recipe by 1,425 calories. OMG. It also reduced the total weight watchers points by 42 points! Now, granted you wouldn’t eat the entire pan…but divide that number out by the number of brownies you cut it into…and you’re still saving a TON.

Guilt-Free 2 Ingredient LaCroix Brownies
Ingredients
- 18.4 oz Brownie Mix Box
- 1 cup LaCroix
- 2 tbsp PB2
- 1 1/2 tbsp LaCroix
Instructions
- Preheat oven to 375F in metal or glass pan. Coat the bottom of the pan with non-stick cooking spray or butter.
- Whisk together Brownie Mix and 1 cup (8 fluid ounces) of Coconut LaCroix until blended with no chunks. Spread into pan.
- Bake for 30-40 minutes, using the toothpick test. If your toothpick has wet batter when removed, it needs more time in the oven.
- While your brownies are baking, you can start with your peanut butter glaze. Mix PB2 with 1 1/2 tbsp Coconut LaCroix until it has a smooth consistency.
- Remove your brownies and allow to cool for 5 minutes before drizzling with the peanut butter glaze. Serve up and top with dark chocolate baking chips for a little extra treat!
