We’re almost to the middle of September which means I’m officially ready for fall. Sweaters, fuzzy socks, and all things pumpkin are at the top of my “must have” list so, when Cheerios sent me a box of their Pumpkin Spice cereal along with a recipe for gooey cereal bars, I knew I had to break out my fall platter and make these ASAP.
The recipe was insanely easy and they turned out absolutely delicious. Full disclosure, I had to stop myself from nearly finishing the batch.
If you’re as into pumpkin as the vast majority of us are, I absolutely recommend making these. If you whip these up for a party or a random weeknight treat for the family, I guarantee they’ll be gone fast!
Pumpkin Spice Cheerios Cereal Bars
Ingredients
- 6 cups Pumpkin Spice Cheerios Cereal
- 11 oz Caramels unwrapped
- 2 tbsp Water
- 2 cups Mini Marshmallows
- 1/2 cup White Vanilla Baking Chips
- 1 tsp Vegetable Oil
Instructions
- Line a 13 x 9 inch pan with parchment and spray bottom and sides with cooking spray. Spray large bowl with cooking spray; place cereal in bowl, and set aside.
- Spray medium microwavable bowl with cooking spray; add unwrapped caramels and water. Microwave uncovered on high for 2 1/2 minutes, stir after each minute until the mixture is smooth. Remove from microwave. Stir in marshmallows until melted and smooth.
- Pour caramel mixture over cereal in bowl; stir until cereal is evenly coated. Pour cereal mixture into pan. with back of spatula sprayed with cooking spray, press mixture in pan until even.
- In small microwavable bowl, microwave baking chips and oil uncovered for 1 1/2 minutes, stirring after 1 minute, until mixture is smooth. Drizzle melted mixture over top of cereal mixture.
- Refrigerate until mixture is firm and glaze is set, about 30 minutes. Enjoy!
