Elia will be two in just over a month and I can’t even put into words how much she’s grown and changed. She’s really become her own little person, it’s CRAZY! With all the milestones and changes however, one thing and remained pretty consistent and that is her love of eggs. It was one of her first words (I was clearly chop liver) and still something she eats every single day.
Eggs are a nutritional powerhouse! One large egg has 6 grams of protein and nine essential amino acids. Eggs are actually one of the only natural sources of vitamin D so, I really can’t blame Elia for being obsessed. At 70 calories each, I am too.
When The Incredible Egg reached out to me about their promotional sponsorship of the much anticipated release of Disney Pixar’s “Incredibles 2” I didn’t hesitate to team up with the amazing duo. My family and I got to spend a perfect summer day supporting something that is already such a big part of our daily life.
They had games for the kids that all centered around eggs. They had bags (although Elia preferred sitting in the egg as opposed to tossing bean bags in), they had egg bowling, egg balancing races, and Elia even got to decorate her very own supers mask. All the little ones were having the time of their lives.
As much as I loved watching Elia run around like a crazy girl, my favorite part were all the recipes The Incredible Egg had cooked up. Every egg recipe was customized for each of the film’s leading characters by reflecting their superpower in each dish, and let’s be honest The Incredible Egg is the perfect sidekick to all those supers out there.
Jack- Jack, the youngest of the Incredible bunch and a bit of a trouble maker (I’m sure Elia can relate), inspired delicious deviled eggs.
Elastigirl’s stretchy zucchini noodles complete with a poached egg was perfect for all mamas, supers or not. I couldn’t help but think it would be perfect for a quick and healthy lunch.
A refreshing blueberry smoothie was inspired by Frozone, Dash’s runny egg yolk sauce open faced sandwich was a favorite of Elias, and Edna Mode’s avant garde cloud eggs were as impressive as her outfitting skills.
I was dying to recreate Violet’s invisible egg yolk ravioli while my husband commented, more than once, that Mr. Incredible’s clobbered egg avocado toast was going to be his new midday snack.
Eggs are fun and versatile and all the recipes reflect that. Not to mention, they’re all on their website and each one takes no more than 30 minutes to make, yup, 30!
The launch event was fun for the whole family and the most natural pairing. I mean let’s be honest, nothing makes you feel more incredible, and powerful than a food that fuels you and is good for you too. I’m so happy I got to share the day with my family!
