Although this next recipe is super delicious, its not super healthy (unless you consider tons of cheese and even more carbs healthy) :)! However, this bread is a fun splurge, super easy to make and usually doesn’t last for more than 5 minutes when I make it for my friends!
What You’ll Need:
1 medium-large round or oval loaf of bread
3 packs your favorite Pesto Mix
1/2 cup Olive Oil
2 cups white cheese (half mozzarella and half parmesan)
What You’ll Do:
1. Preheat oven to 350° Cut 1 inch strips lengthwise across the bread, only cutting 3/4 way down through the loaf. Turn the loaf 180°, and cut 1 inch strips the other direction so you end up with 1 inch cubes all across the bread (see picture below)
2. Mix Pesto Mix together with the Olive Oil and using a pastry brush or spoon, spread the pesto mix all over the loaf and inside the cubes as well.
3. Stuff 1 1/2 cups of the cheese into the cracks and in-between the cubes. Reserve the remaining 1/2 cup for later. Wrap loosely in tinfoil and bake for 20 minutes.
4. After 20 minutes take the loaf from the oven, remove foil from the top and sprinkle the remaining cheese on top. Broil for 8-10 minutes or until the cheese on top is brown and bubbly.
