If you haven’t heard, the newest Starbucks obsession is their sous vide egg bites.
I was introduced to these bites of heaven by a coworker who insisted I try a bite them and I was instantly hooked. I had never had egg whites taste so flavorful!
So the next several mornings I made a trip to Starbucks for the same sous vide egg bites, but at around $5 a pop, I couldn’t help but think they were a little pricey for something I could easily recreate at home.
Now some of you may be asking “what the heck is sous vide?” (pronounced soo-veed). It’s a method of cooking where an item of food is placed in a vacuum sealed bag and then cooked in a water bath with an immersion circulator that provides a constant low temperature that cooks food evenly and beautifully. This technique is very cool and ultra high tech. If you want to invest in sous vide equipment, here is a link to some of the options out there.
Fair warning, they’re also pricey.
I thought, there has to be an easier way! I headed over to amazon, quickly found this cute egg bites silicone pan and realized it’s perfect for my homemade egg bites.
And for all the Instant Pot lovers, this pan is made specifically for the Instant Pot. I don’t have one, but I’m sure this recipe would also work in there. So instead of sous vide cooking, I decided I’d use the oven and simply place the pan in a water bath and bake the bites this way instead.
And drumroll please….
They turned out amazing!!!
I’ve shared the recipe below. And while I’m not an expert on Keto or low carb diets, I believe this would work well!
What You’ll Need:
1 cup of liquid egg whites
¼ cup of cottage cheese
½ cups of diced red pepper
2 Tablespoons of chopped fresh parsley and chives
1 teaspoon of kosher salt
What You’ll Do:
1. Preheat your oven to 350 ºF. Find a casserole dish that is large enough to hold the egg bites pan and fill it with approximately ½ inch of water. This will be your water bath in which the egg bites pan will sit in and bake in.
2. In a large mixing bowl, mix together egg whites, cottage cheese, the diced red pepper, the fresh herbs and salt. Mix with a whisk until all ingredients are thoroughly combined. Spray egg bites pan with pan spray (this is optional as the pan is silicone and food shouldn’t stick.) pour egg mixture into the egg bites pan and fill to just below the top.
3. Place the egg bites pan into the casserole dish and bake for approximately 1 hour. Check done-ness by inserting a toothpick into the center of the egg bites after 1 hour. If the toothpick comes out clean, they are ready. Allow egg bites to cool slightly before removing. I found it easiest to remove them with a spoon. Enjoy your morning treat while it’s warm, or store the bites for a quick breakfast all week.
