Every winter, I find myself craving more comfort foods and the desire to make more crock pot meals. Something about eating a meal that’s been slow cooked all day gives me a warm and fuzzy feeling.
Since Elia is eating more food now (and constantly trying to help out with the cooking), I wanted to create a recipe that was easy for her to participate in AND covered in cheese so I know she’ll eat it. That’s how I came up with this cheesy tater tot casserole.
With the recipe in mind, all I needed to do was get the ingredients. Since walking to the grocery store when you live in a city isn’t my favorite thing to do (I hate being cold), I ordered all the groceries right off Peapod.
So, basically, I didn’t leave my couch to get the groceries and my daughter could cook for me.
This is basically the best recipe ever…
Once the ingredients got to my door, the actual assembly process took less than 15 minutes. The beauty of a slow cooker (I use the one from Hamilton Beach) is being able to walk away and not think about it. .
It’s quick, easy comfort food. Not to mention both Elia and I couldn’t get enough of it!
What You’ll Need
1 pound of ground beef
1 can cream of chicken soup
1 can diced tomatoes
1 package of frozen tater tots
2 packages of shredded cheese
½ Tbsp salt
2 tsp garlic salt
½ Tbsp pepper
What You’ll Do
1) In a skillet, add ground beef. Sprinkle salt, pepper, and garlic salt. Once browned until slightly crispy, add to the slow cooker.
2) Add the cream of chicken soup and diced tomatoes. Mix around. This was Elia’s big role!
3) Arrange tater tots on top.
4) Place the lid on the slow cooker. Turn it on, select manual then set to low. Cook for 3 hours.
5) Sprinkle cheese on top and cook for another 30 minutes.
Dive into that tater tot casserole and enjoy!

When you add the can of tomatoes do you also add the liquid as well ?
