Today I’m sharing a family recipe for Peanut Butter Caramel Cookies that I think you will all love.
What You’ll Need:
1 cup creamy peanut butter
½ cup butter, softened
½ cup granulated sugar
½ cup packed brown sugar
1 large egg
1 tablespoon vanilla extract
1 and ¾ cups all-purpose flour
1 teaspoon baking soda
¼ teaspoon salt
24 caramel chocolate candies, unwrapped. I use Rolos.
What You’ll Do:
1. Preheat the oven to 350 F. Line 2 sheet pans with parchment paper, or foil (spray with pan spray if using foil.)
2. In the bowl of an electric mixer, with a paddle attachment, cream together the peanut butter, butter, sugar and brown sugar on medium speed. (I always make sure my sugars are sifted first to avoid any clumps.) Be sure to mix the ingredients thoroughly – this will result in the smoothest dough.
3. Add the egg and vanilla extract and mix on medium speed until well combined.
4. In a separate mixing bowl, whisk together the flour, baking soda and salt. Turn off the mixer and add the flour mixture to the butter and sugar mixture and mix on low speed until well combined.
5. Using an ice cream scoop or large tablespoon, start making 1 inch balls of dough and place on to baking sheet. Slightly flatten dough with the palm of your hand. Place candy in the center of each cookie, press the dough around the it, until you can no longer see the it. Roll the dough in between the palm of your hands until smooth.
6. Bake for 12 minutes, but no longer than 15 minutes. Let cool on the baking sheet for a few minutes and enjoy! (Optional: dust with powdered sugar once cooled.)
Usually makes 24- 30 cookies!
