Thanksgiving may be behind us, but I feel like people forget those foods don’t just need to be saved for the 4th Thursday in November! I’m a huge fan of Turkey Day foods all the time (especially stuffing)!
While I’ll always opt for a more traditional stuffing on the holiday, I like to create fun and interesting spin-offs for the other times of the year. My latest creation is these delicious BBQ Beef Cornbread Cheesy Stuffin’ Muffins.
I’m currently obsessing over the Curly’s BBQ beef , which you can find in the meat case at the grocery store. Curly’s BBQ beef was the perfect add-in to this stuffing! It’s already pre-cooked and has the most delicious, tangy sauce. I completely dreamed up this recipe (try googling it and NOTHING will come up) and considering it was only a product of my imagination, they turned out absolutely AMAZING. The perfect comfort food! Dice up your celery and onion.
Melt butter in pot and add in diced celery and onion.
Once softened, add chicken stock.
Once boiling, turn off the heat. Stir in the cornbread stuffing.
Pour in creamed corn, mix together.
Add Curly’s BBQ beef and mix.
Stir in cheese.
Scoop into muffin tin and place into the oven.
Let them cool completely and dig in! If you try to take them out too early, they will fall apart.

BBQ Beef Cornbread Cheesy Stuffin’ Muffins
Ingredients
- 1 package Curly’s BBQ Beef
- 2 stalks Celery
- 1 White Onion diced
- 1 package Cornbread Stuffing
- 1 can Creamed Corn
- 3 cups Chicken Stock
- 5 tbsp Butter
- 1/2 cup Cheese shredded
Instructions
- Preheat the oven to 350 degrees.
- Dice up your celery and onion.
- Melt butter in pot over medium heat and add in diced celery and onion.
- Once softened, add 3 cups of chicken stock and bring to a boil.
- Once boiling, turn off the heat. Stir in the cornbread stuffing until it begins to get fluffy.
- Add Curly’s BBQ beef and mix.
- Stir in cheese.
- Scoop into muffin tin and place into the oven for 35 minutes or until golden brown.
- Let them cool completely and dig in! If you try to take them out too early, they will fall apart.
