Simple recipes are my go-to when I have crazy busy weeks and just don’t have the time or energy to whip something up in the kitchen. Even when I’m in a rush, I’m such a foodie and always need something tasty to eat. This Chicken Salad Sandwich recipe is perfect for those hectic times because you can prep it at the start of your week in under and 20 minutes and use it throughout the week for on-the-go meals. Score!
Not only is this recipe delicious, it’s super flexible, so you can add any ingredients to the chicken salad base that your little taste buds desire! I’m a fan of adding fresh sliced tomatoes and some crisp lettuce to the sandwich.
Side-note, this sandwich will be taken up a notch if you use Pane Turano Italian Bread. It basically makes an easy weeknight meal into a gourmet experience for your mouth. Turano has been dishing up some of the freshest artisan-style bread for over 50 years (so you know they know what they’re doing.) OH, and these bread slices are HUGE you guys so you can stuff your face and still keep the “it’s just one sandwich” excuse. Double score!
This recipe makes enough for about 3 giant sandwiches (you may only be able to eat half).
Truffle Chicken Salad with Grapes
Ingredients
- 1 full Chicken Breast cubed
- 1/2 cup Mayonnaise
- 3/4 cups Grapes halved
- 1/2 cup Almonds chopped
- 1 pinch Truffle Salt
- Tomato sliced
- Lettuce
- Pane Turano Italian Bread
Instructions
- Bring a pot of salted water to a boil and toss your cubed chicken pieces. Leave them in there to cook and get nice and tender for about 10-15 minutes.
- While that’s cooking, mix together your mayonnaise, grape halves, almonds, and truffle salt until combined.
- Remove your chicken from the pot and let cool for a few minutes. Then, with two forks, shred your chicken. Add chicken to the salad mixture and mix until combined. Test for flavor and add more truffle if needed.
- Place the mixture onto a slice of the Pane Turano Italian Bread, top with a few tomato slices and some lettuce, then the other bread slice. Cut in half and dig in!
You can alter the recipe however you please; double it for more salad, add different ingredients, whatever! Now you have a simple and quick recipe for those crazy busy times I know we all have.
