One of my favorite meals in the entire world is the Chopped Salad from Portillo’s. I literally could eat this salad for every single meal and be happy. I’m not sure why I’m so addicted to this salad, but it might have something to do with the irresistible combination of salty bacon, creamy blue cheese and sweet dressing.
Do you want to know the best part about making this salad at home? You can control the quality of product you’re putting in it (and it makes it taste a whole lot better)! For my version, I used thick cut, organic bacon from the Whole Foods meat counter and my favorite variety of blue cheese (gorgonzola dolce), for an even more elevated take on this classic salad.
I will admit, I still haven’t nailed the Portillo’s house dressing 100%, but it’s pretty darn close. My guess is it has A LOT less sugar than the original, so I’m feeling pretty good about that.
Portillo’s Chopped Salad Copycat
Ingredients
- Chopped Romaine Lettuce
- Chopped Iceberg Lettuce
- Thinly Sliced Red Cabbage
- Diced Fresh Tomatoes
- Thinly Diced Scallions
- Diced Up Cooked Bacon
- Blue Cheese
- Ditalini Pasta cooked
Copy Cat Portillo’s House Dressing
- 1/2 cup Red Wine Vinegar
- 2 tbsp Honey
- 1 tsp Sugar
- 1 tsp Italian seasoning dried
- 2 cloves Garlic smashed and chopped
- 3/4 cup Olive Oil
- 1 tsp Salt
- 1 tsp Pepper
Instructions
- Combine all dressing ingredients blender (except the olive oil) and blend start to blend on a low setting. Slowly drizzle in the olive oil and once it’s all in the blender, turn it on high and let emulsify for 30 seconds to a minute (until it becomes creamy).
- Combine the iceberg, romaine, cabbage, tomatoes, scallions, cooked bacon, blue cheese and cooked pasta in a large bowl.
- Top with dressing and serve!
Done and done! If you haven’t tried this salad before, be warned, because you will actually become addicted.
