Whenever I’m looking for a quick, easy and delicious dinner for my husband, I often default to one of my favorite pasta creations of all time. This dish has crunch, sweetness, tang and creaminess all on one epic plate. It’s also great to make for a crowd because it is relatively inexpensive!
Tomato, Corn & Brie Pasta

Ingredients
- 4 Tomatoes cut into 1/2 inch cubes
- 4 Large Ears of Corn shucked
- 1 pound Brie Cheese rind removed, cut into pieces
- 1 cup Baby Arugula fresh
- 3 Garlic Cloves peeled and finely minced
- 1 cup Olive Oil
- 1/2 tsp Salt
- 1/2 tsp Pepper
- 1 1/2 pounds Your Favorite Pasta I like using fresh spaghetti
Instructions
- Combine tomatoes, corn, brie, garlic, 1 cup olive oil, salt and pepper in a large bowl. Let sit covered at room temperature for at least an hour.
- Bring a large pot of water to a boil Add your pasta of choice and cook according to directions on box (if using fresh pasta, just cook for 2-3 minutes).
- Drain pasta and immediately toss with the tomato and brie mixture. Gently mix in some fresh arugula and serve!
