I don’t know about you, but I have a complete complex about using jarred tomato sauce. Not only does the sauce go bad really quickly after opening it, but unless you buy one that’s pretty much flavorless and pure, it can be filled with tons of disgusting additives and GMOS.
That’s why I came up with my own recipe that you can prep in the same time it takes you to open a jar (plus some cooking time). I guarantee this sweet and spicy roasted tomato sauce will convince you to leave the jarred stuff on the shelf.
QUICK Oven Roasted Tomato Sauce
Ingredients
- 2 pints Cherry Tomatoes
- 1 tbsp Olive Oil
- 2 tsp Sugar
- 1 tsp Kosher Salt
- 1 tsp Pepper
- Red Pepper Flakes to taste depending on how spicy you like it
Instructions
- Preheat your oven to 375 degrees. Lay your cherry tomatoes out on a sheet pan and drizzle with olive oil. Toss around until well coated. Season with sugar, salt and pepper.
- Bake for 30-45 minutes until tomatoes are soft and begin to wrinkle/burst. Remove from oven and immediate transfer to a deep bowl.
- With a potato masher (or back of a fork), gently start to smash the tomatoes until a sauce is formed. You can make it as smooth or as chunky as you like it. Add your red pepper flakes for heat.
Pretty simple right!? This sauce is also totally versatile. I use it on my cauliflower crust pizza, quick pasta dishes and for my crispy chicken/eggplant parmesan!
Love always,
Erica
