One of my favorite takeout dishes is pineapple fried rice! Ordering it in can get pretty expensive (not to mention they use so much oil and MSG) so I wanted to try to make my own version at home.
It turned out to be easier than I thought!
The coolest part? Aside from the pineapple, I already had all the other ingredients in my cabinet/refrigerator since they are all pantry staples.
Pineapple Fried Rice

Ingredients
- 1 cup Cooked White Rice totally cooled for at least an hour
- 1 tbsp Sesame Oil
- 1 tbsp Vegetable Oil
- 1 tbsp Ginger minced
- 1 tbsp Garlic minced
- 1 Scallion whites and greens separated
- 1/2 cup Soy Sauce
- 1 Onion diced or sliced (however you like it)
- 1/2 cup Peas frozen
- 1/2 cup Pineapple diced in small chunks
- 2 Eggs
- Salt and Pepper to taste
Instructions
- In a extra large skillet or wok, heat up the vegetable oil and sesame oil over high heat. Add the diced onion, garlic, ginger, pineapple & white part of the scallions. Cook for a minute.
- Add in your cooked, cooled rice and soy sauce. Spread it out evenly in the pan and don’t touch it for a few minutes (this will let it get crispy. Once you get it crispy, start tossing it around with tongs to get everything incorporated.
- Push the fried rice over to the sides of the skillet/wok and crack your two eggs in the center. Quickly scramble them around and incorporate them into the rice. Add your frozen peas and cook for another minute or two.
- Serve with green part of scallion.
That’s it! Once the rice is cooked and cooled, the whole dish only takes about 8 minutes to put this dish together.
