This cold weather is finally starting to let up, hooray! I can’t tell you how excited I am to be losing the heavy winter jacket and gearing up for an amazing Chicago spring and summer.
Since the past couple days have been nice outside, I thought I would try to keep the momentum going by sharing a spring inspired quinoa dish that I love. This dish has unique components that perfectly balance together and create something really spectacular. It’s also really healthy too!

Ingredients
- 1 cup Quinoa
- 1 1/2 cups Water
- 1/2 pound Watermelon cubed
- 1/4 cup Feta Cheese crumbles
- 2 tbsp Mint
- 1/2 cup Rice Wine Vinegar
- 2 tbsp Lime Juice
- Salt and Pepper to taste
Instructions
- Cook up your quinoa! Just take your quinoa and water and boil it on high. Once boiling, reduce heat to medium low, cover it and let it cook for about 15 minutes (or until all the water is absorbed).
- Make your dressing. Whisk together the rice wine vinegar and lime juice.
- Mix together your quinoa, watermelon, feta, mint and dressing. Serve warm or cold.
This recipe should make enough for about 4 people as a main dish and about 8 people for a side dish.
