Growing up, one of my favorite sweet, breakfast breads was banana bread.
Despite this, in the nearly 10 years that I’ve lived on my own, I’ve never tried to make it (mostly because baking freaks me out). This all changed yesterday when I saw that I had 5 bananas starting to go bad on my counter top. I knew I had to do something with them, because I hate wasting good food like that.
I looked up a recipe for banana bread and found that all the ingredients were pantry staples. I modified the recipe a tiny bit (don’t I always?) and it came out great!
The prep only took about 8 minutes and the baking time was about 50 minutes. Needless to say, from the time I thought to make banana bread to the time I finished, it was only about an hour!
In a large bowl, combine the flour, baking soda and salt.
In a separate bowl, cream together the butter and sugar. If you don’t know how to cream it, read this.
Once the butter is creamed, add your two beaten eggs and mashed bananas and combine until smooth.
Pour batter into a loaf pan. Bake until golden brown.
Doesn’t that sound delicious?! I’m thankful I have some left over!
Banana Bread (from scratch)
Ingredients
- 2 cups Flour
- 1 tsp Baking Soda
- 1/2 tsp Salt
- 1/2 cup Butter one stick; room temperature
- 2/3 cup Brown Sugar
- 1/3 cup White Sugar
- 2 Eggs beaten
- 2 1/3 cups Mashed Over Ripe Bananas about 5
- 1 tsp Cinnamon
Instructions
- Pre-heat the oven to 350 degrees. In a large bowl, combine the flour, baking soda and salt.
- In a separate bowl, cream together the butter and sugar. It’s super simple. I did it by hand.
- Once the butter is creamed, add your two beaten eggs and mashed bananas and combine until smooth. You can use a hand mixer for this to make it faster or just do it by hand. Just make sure it’s smooth.
- Once the banana/butter mixture is smooth, pour it into the flour mixture and stir till well combined. Add the cinnamon and give it one more stir. The batter will be thick.
- Pour batter into a loaf pan (mine is 10 X 5). Bake for 50-60 minutes until golden brown. You can test if it’s done by sticking a toothpick in the center. If it comes out smooth, it’s cooked.
