I think I’ve invented my new favorite dish.
Last night I realized I had a frozen pie crust in the freezer that I should probably use, but I wasn’t in the mood for a standard chicken pot pie. After looking around my kitchen, I realized I also had a sweet potato that was probably on its last legs.
Then it hit me.
Why not make a BBQ chicken shepard’s pie and top it with mashed sweet potatoes? In theory, everything about it sounded so delicious. In reality, it was actually more incredible than I had even conceptualized.
Take your cubed chicken breast and cook it in a large skillet with olive oil.
Add your frozen pearl onions.
Add the corn and BBQ sauce. Mix together.
Mash your sweet potatoes with the garlic, butter, cinnamon, chili powder and milk.
Pour your chicken mixture into the pie crust and top with mashed potatoes.
Bake and enjoy!

BBQ Chicken Shepard’s Pie
Ingredients
- 1 Pie Crust
- 1 Extra Large Sweet Potato cubed and boiled until soften
- 1 clove Garlic
- 1/2 cup Milk
- 1 tbsp Butter
- 3/4 Boneless Skinless Chicken cubed
- 4 oz Canned Corn
- 4 oz Frozen Peas canned is gross
- 4 oz Frozen Pearl Onions or whole caramelized onion
- 1 cup Your Favorite BBQ Sauce
- Olive Oil
- 1 tsp Cinnamon
- 1 tsp Chili Powder
- Salt and Pepper to taste
Instructions
- Pre-heat your oven to 375 and make sure your pie crust is out coming to room temperature.
- Take your cubed chicken breast and cook it in a large skillet with olive oil until it starts to brown.
- About halfway through cooking the chicken, add your frozen pearl onions. Then when those soften, add your peas.
- Once the peas soften, lower the heat and add the corn and BBQ sauce. Taste and add salt and pepper as needed. Mix together and let simmer for a few minutes while you prepare your potatoes.
- Mash your sweet potatoes with the garlic, butter, cinnamon, chili powder and milk. Start with a little bit of the milk and keep adding as you need it (you may not use it all your you may use more)
- Pour your chicken mixture into the pie crust and top with mashed potatoes.
- Bake for 35-40 minutes. I recommend putting the pie on a baking sheet in case it spills over a little.
