Last week, I was lucky enough to be featured in Favbio Viviani’s magazine. For those of you who don’t know, Fabio is a Top Chef fan favorite and an all around unbelievable cook. The theme of his magazine was, “Chanukah”, and I knew that sharing my cheddar potato latkes was the perfect idea!
Since I can remember, every year during Chanukah, my family would always cook potato latkes. As I got older (and started experimenting in the kitchen), I began making this classic dish myself and realized that they were really a blank canvas for some pretty interesting recipes!
What’s my latest creation?
A Cheddar version made with grated sweet onion and zesty garlic! I made these for the first time last year for a friend’s holiday party and they were a hit. Ever since, my friends have been begging me for the recipe and now I’m excited to share it with all of you.
Place the grated potato, onion, cheddar, garlic, flour, baking powder and eggs in a large bowl. Combine ingredients.
Take a golf ball sized-amount of the mixture and place it in the hot oil.
Once flattened, let cook until brown. Flip over and let the other side brown up and cook through.
I know Chanukah has come and gone, but it’s never a bad time to eat this delicious treat! 🙂
Cheddar Potato Latkes
Ingredients
- 2 Large Russet or Baking Potatoes peeled and grated
- ½ Onion grated
- ½ cup White Cheddar Cheese grated
- 2 cloves Garlic minced
- ½ cup Flour
- 1 tsp Baking Powder
- 2 Eggs
- Peanut Oil
- Salt & Pepper to taste
Instructions
- Place the grated potato, onion, cheddar, garlic, flour, baking powder and eggs in a large bowl. Combine ingredients until mixed thoroughly (using your hands is easiest).
- In a large skillet, heat up the peanut oil. Use enough to cover the entire base of the pan. Once the oil is hot, take a golf ball sized-amount of the mixture and place it in the hot oil. After about 1 minute, flatten with a spatula.
- Once flattened, let cook for about 2 minutes (until brown). Flip over and let the other side brown up and cook through.
- Remove from hot oil and let drain on a paper towel. Serve warm with cool sour cream and enjoy!
